Question:
I just bought a pair of Irish Setter Elk Tracker 860 Hunting boots:

I've only had them few days and the leather around toe area of one boot has
scratches already.
I think I got them either by hitting something made while walking or
underneath my dashboard in my civic there's some sharp metal stuff
protruding and when I change
gears and press on the clutch I think I may be hitting the leather toe of
the boot against sharp metal
objects underneath the dashboar.
Are there any toe caps that you can buy and insert on the boot?
Perhaps a removable toe cap that straps on or something else?

I can scuff the toe on my boots just by looking at them.
You might try a typical shopping mall shoe shop to see if they have
any toe shields, but I think that shit kickers will look stupid on yer
boots.
I use leather dye to cover the scuff marks when they get bad. Your
best bet IMO, would be to find the thing under your dash that is
tearing up your boots and use a little electrical tape to tape up the
sharps under the dash.
I'd also accept the fact that they are boots, they are going to get
scuffed up, especially sence you are wearing them under harsh
conditions. Think about it, you payed for comfort and utility, not
looks. Constantly worrying about scuffing the boots will make you less
productive and can be unsafe. I wouldn't want to work with someone who
was always looking down at their boots and not keeping their eyes
focused on their task.
If you want a pair of boots for looks, then buy a pair just for looks,
work boots will get trashed in short order, just a fact of life, get
used to it.
